- Preheat oven to 350°F (175°C). Toast the coconut on a small baking sheet for 5 to 7 minutes until golden. Set aside.
- Whisk the melted butter, brown sugar, and granulated sugar until smooth. Whisk in the egg and vanilla until glossy.
- Fold in the flour, baking soda, and salt until no streaks remain, then fold in the toasted coconut and chocolate chips.
- Scoop dough onto parchment-lined baking sheets, spacing 2 inches apart. Bake both sheets at once for 10 to 12 minutes, rotating pans halfway through.
- Cool on the sheets for 2 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
Toasted coconut can be made up to 2 days ahead and stored in an airtight container. If your kitchen is warm, chill the dough for 15 minutes before scooping to control spread.
