Ingredients
  

  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sweetened shredded coconut, toasted
  • 3/4 cup semisweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Toast the coconut on a small baking sheet for 5 to 7 minutes until golden. Set aside.
  2. Whisk the melted butter, brown sugar, and granulated sugar until smooth. Whisk in the egg and vanilla until glossy.
  3. Fold in the flour, baking soda, and salt until no streaks remain, then fold in the toasted coconut and chocolate chips.
  4. Scoop dough onto parchment-lined baking sheets, spacing 2 inches apart. Bake both sheets at once for 10 to 12 minutes, rotating pans halfway through.
  5. Cool on the sheets for 2 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

Toasted coconut can be made up to 2 days ahead and stored in an airtight container. If your kitchen is warm, chill the dough for 15 minutes before scooping to control spread.
