- Heat the oil in a pot over medium heat. Add the ginger, garlic, and white scallion parts and cook for 1 minute.
- Add the mushrooms and cook for about 4 minutes, stirring occasionally, until softened and golden at the edges.
- Pour in the broth and soy sauce, bring to a boil, then reduce the heat and simmer gently for 10 minutes.
- Remove from heat. Fish out the ginger slices if desired, then stir in the sesame oil. Ladle into bowls and top with the green scallion parts and a pinch of white pepper.
Notes
The soup tastes best the day it is made, but leftovers keep well. Just add fresh scallions and a tiny drizzle of sesame oil when you reheat it, so the bowl still feels bright and fresh.
