Clear Mushroom Soup Recipe

Ingredients
  

  • 8 cups chicken or vegetable broth
  • 1 tbsp neutral oil
  • 1 inch fresh ginger, peeled and thinly sliced
  • 2 cloves garlic, smashed
  • 8 oz cremini or white mushrooms, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 2 scallions, thinly sliced (white and green parts separated)
  • Pinch of white pepper (optional)

Method
 

  1. Heat the oil in a pot over medium heat. Add the ginger, garlic, and white scallion parts and cook for 1 minute.
  2. Add the mushrooms and cook for about 4 minutes, stirring occasionally, until softened and golden at the edges.
  3. Pour in the broth and soy sauce, bring to a boil, then reduce the heat and simmer gently for 10 minutes.
  4. Remove from heat. Fish out the ginger slices if desired, then stir in the sesame oil. Ladle into bowls and top with the green scallion parts and a pinch of white pepper.

Notes

The soup tastes best the day it is made, but leftovers keep well. Just add fresh scallions and a tiny drizzle of sesame oil when you reheat it, so the bowl still feels bright and fresh.
