Classic Sweet Potato Casserole Recipe

Ingredients
  

  • 3 lbs orange-fleshed sweet potatoes
  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1/4 cup whole milk
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp fine sea salt
  • 1/2 cup all-purpose flour
  • 1/3 cup packed light brown sugar (for streusel)
  • 1/2 cup chopped pecans
  • 2 cups mini marshmallows

Method
 

  1. Peel sweet potatoes, cut into 2-inch chunks, and simmer in salted water until fork-tender, about 15 to 18 minutes. Drain thoroughly.
  2. Beat hot potatoes with half the melted butter, 1/2 cup brown sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt until smooth, about 2 minutes.
  3. Mix the remaining melted butter, 1/3 cup brown sugar, flour, and pecans into a clumpy streusel.
  4. Spread filling into a greased 2-quart dish, top with streusel, and bake at 375°F for 25 to 30 minutes until bubbly at the edges.
  5. Remove from oven, switch broiler to high, scatter mini marshmallows on top, and broil 1 to 2 minutes until puffed and golden. Serve immediately.

Notes

Marshmallows puff up beautifully but collapse as they cool, so this casserole is at its showiest right out of the broiler. If you want to prep ahead, assemble the filling and streusel a day in advance, cover, and refrigerate. Add 5 minutes to the bake time, then top with marshmallows and broil as written.
