- Whisk the cornstarch and cold water in a small bowl until smooth.
- Combine ketchup, sugar, rice vinegar, soy sauce, and pineapple juice in a small saucepan over medium heat. Whisk in the cornstarch slurry and bring to a gentle bubble. Reduce heat slightly and simmer for 5 to 7 minutes, stirring often, until glossy and thick.
- Pour the hot sauce into a serving bowl and serve immediately.
Notes
If you skip the pineapple juice, the sauce will be slightly sharper. Add an extra tablespoon of sugar or water if you want to soften the edge. The sauce thickens more as it cools, so pull it off the heat a few seconds before it looks fully thick to avoid an overly firm texture later.
