Classic Reuben Sandwich Recipe

Ingredients
  

  • 4 slices rye bread
  • 8 oz thinly sliced corned beef
  • 4 slices Swiss cheese
  • ½ cup sauerkraut, drained and squeezed very dry
  • ¼ cup Russian dressing
  • 2 tbsp unsalted butter, softened

Method
 

  1. Spread 1 tbsp Russian dressing on one side of 2 bread slices. Top with corned beef, Swiss cheese, and sauerkraut. Spread dressing on remaining bread slices, place on top.
  2. Butter the top of each sandwich with 1 tbsp butter. Place butter-side down in a skillet over medium heat. Cook 4 minutes until golden and crisp.
  3. Butter second side with remaining butter, flip, and cook 3 to 4 minutes until cheese melts and bread is golden. Press gently with a spatula.
  4. Transfer to a board, slice diagonally, and serve immediately.

Notes

Squeezing the sauerkraut dry is the single most important step for a crisp sandwich. If you don’t have Russian dressing on hand, stir together 2 parts mayonnaise with 1 part ketchup and a little prepared horseradish. Serve right away while the cheese is gooey.
