Classic Mushroom Sauce Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 8 oz cremini mushrooms, thinly sliced
  • 1 medium shallot, minced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 tbsp all-purpose flour
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • ½ cup heavy cream
  • Salt and freshly ground black pepper

Method
 

  1. Melt butter in a skillet over medium-high heat. Add mushrooms and a pinch of salt, cook 6-8 minutes undisturbed at first, until deep golden and dry.
  2. Lower heat to medium, push mushrooms aside, and cook shallot 2-3 minutes until soft. Stir in garlic and thyme, cook 30 seconds.
  3. Sprinkle flour over the mushrooms and stir 1 minute. Gradually whisk in broth and Worcestershire, then simmer 2-3 minutes until thickened.
  4. Stir in cream, simmer 1-2 minutes until glossy. Season with salt and pepper. Spoon over steak or sides and serve hot.

Notes

Wipe mushrooms with a damp towel instead of washing them; excess water makes it harder to get that deep brown sear. If the sauce sits and thickens too much, loosen it with a splash of warm broth or cream when reheating.
