Ingredients

  • 1 (10-inch) round Italian bread loaf
  • 1 cup chopped pitted green olives
  • 1 cup chopped pitted Kalamata olives
  • ½ cup chopped giardiniera, drained
  • ¼ cup chopped pepperoncini
  • 3 tbsp capers, rinsed
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ¼ cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 4 oz thinly sliced Genoa salami
  • 4 oz thinly sliced mortadella
  • 4 oz thinly sliced capicola
  • 4 oz sliced provolone cheese
  • 4 oz sliced mozzarella cheese

Method

  1. Mix green olives, Kalamata olives, giardiniera, pepperoncini, capers, garlic, oregano, olive oil, and red wine vinegar in a bowl until combined.
  2. Halve the bread horizontally, remove some interior crumb, spread the olive salad on the bottom half, then layer salami, mortadella, capicola, provolone, and mozzarella. Close with the bread top.
  3. Wrap the sandwich tightly in plastic wrap, weight it down with a heavy pan, and let it press at room temperature for at least 30 minutes. Unwrap, slice into wedges, and serve.

Notes

Pressing time is not counted in the prep time; plan on at least 30 extra minutes before you want to eat. If your bread is very tall, hollow it out a little deeper so the olive salad stays put and the first bite gets every layer.
