Ingredients

  • 3 tbsp extra-virgin olive oil
  • 1 small yellow onion, finely diced
  • 4 cloves garlic, thinly sliced
  • 1 (28-oz) can crushed tomatoes
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • A pinch of red pepper flakes (optional)
  • 5-6 large fresh basil leaves, torn

Method

  1. Heat oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Stir in garlic and cook 1 minute until fragrant.
  2. Add crushed tomatoes, salt, pepper, and red pepper flakes. Bring to a gentle simmer, then lower heat and cook uncovered for 25 to 30 minutes, stirring occasionally.
  3. Remove from heat. Stir in torn basil and adjust salt to taste.
  4. Spoon over hot pasta and serve with Parmesan and a twist of black pepper.

Notes

For a smoother sauce, use an immersion blender after simmering. The sauce thickens as it cools; thin it with a splash of pasta cooking water if needed.
