Ingredients

  • 1 package (10 oz) frozen chopped spinach, thawed and squeezed very dry
  • 1 container (16 oz) sour cream
  • 1 cup mayonnaise
  • 1 package (1.4 oz) Knorr Vegetable recipe mix
  • 1 can (8 oz) water chestnuts, drained and finely chopped
  • 3 green onions, thinly sliced, a tablespoon reserved for garnish

Method

  1. Squeeze all the water from the thawed spinach using a clean kitchen towel or paper towels until the spinach is dry and crumbly.
  2. In a large bowl, stir together the sour cream, mayonnaise, and Knorr mix until completely smooth.
  3. Fold in the spinach, water chestnuts, and most of the green onions (save a tablespoon of the green tops). Cover and refrigerate at least 2 hours.
  4. Just before serving, give the dip a stir and top with the reserved green onion.

Notes

Chill for at least 2 hours before you serve it, the flavor changes completely once the seasonings have time to bloom. If you can make it the night before, it’s even better.
