Classic Grinder Sandwich Recipe

Ingredients
  

  • 4 crusty Italian sub rolls, split lengthwise
  • 4 oz thinly sliced provolone cheese
  • 4 oz thinly sliced salami
  • 4 oz thinly sliced capicola
  • 4 oz thinly sliced mortadella
  • ¼ cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 small garlic clove, minced
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ head iceberg lettuce, shredded thin
  • 2 medium tomatoes, sliced
  • ¼ small red onion, thinly sliced
  • ¼ cup sliced pepperoncini, drained

Method
 

  1. Whisk together the olive oil, red wine vinegar, oregano, garlic, salt, and pepper. Set aside.
  2. Shred the lettuce and slice the tomatoes, red onion, and pepperoncini. Keep them separate for now.
  3. Preheat the oven to 400°F (200°C). Open the rolls on a baking sheet, layer the provolone, salami, capicola, and mortadella on the bottom halves, and bake 5 to 7 minutes until the cheese melts and the bread crisps.
  4. While the sandwiches bake, toss the lettuce with half the dressing. Pile the dressed lettuce on the hot sandwiches, add the tomatoes, onion, and pepperoncini, and drizzle on more dressing. Close the rolls and serve immediately.

Notes

These sandwiches are at their crispiest and most delicious right out of the oven. If you need to hold them for a few minutes, wrap them loosely in parchment paper so the steam doesn’t soften the bread too much.
