- Chop the anchovies, garlic, and capers together on a board into a fine paste. Add the parsley and chop until the mixture is finely minced into a coarse, damp paste.
- Transfer to a small bowl. Whisk in the vinegar, lemon juice, and mustard. Slowly drizzle in the olive oil while whisking until the sauce is glossy and combined.
- Let sit for 5 minutes, then taste and add a pinch of salt and pepper only if needed. Spoon the sauce over grilled meat, fish, or roasted vegetables right before serving.
Notes
The sauce tastes even better after sitting at room temperature for about 30 minutes, so plan to make it a little ahead if you can. The oil will separate if it sits too long; just stir it back together. If you prefer a smooth sauce, whirl everything except the oil in a small food processor, then stream the oil in with the motor running.
