Classic Corned Beef Sandwich Recipe

Ingredients
  

  • 8 oz thinly sliced deli corned beef
  • 4 slices rye bread
  • 4 slices Swiss cheese
  • ½ cup drained sauerkraut
  • 2 tbsp unsalted butter, softened
  • 3 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tsp sweet pickle relish
  • ½ tsp Worcestershire sauce
  • 1 tsp lemon juice
  • Salt and black pepper

Method
 

  1. Mix mayonnaise, ketchup, relish, Worcestershire, lemon juice, salt, and pepper in a small bowl to make the dressing.
  2. Spread butter on one side of each bread slice. Toast two slices buttered side down in a skillet over medium heat for 3 to 4 minutes until golden. Repeat with remaining slices.
  3. Warm the corned beef in the same skillet with 1 tablespoon water over medium-low heat, covered, for 1 to 2 minutes. Uncover and cook off any liquid.
  4. Spread dressing on the untoasted sides of all bread slices. Layer cheese, corned beef, sauerkraut, and remaining cheese, then close sandwiches. Grill in the skillet over medium heat with a weight on top for 3 to 4 minutes per side, until bread is crisp and cheese melts.
  5. Rest for 1 minute, cut in half, and serve while hot.

Notes

Drain and pat the sauerkraut as dry as possible before assembly so the bread stays crisp during grilling.
