Method
- Mix mayonnaise, ketchup, relish, Worcestershire, lemon juice, salt, and pepper in a small bowl to make the dressing.
- Spread butter on one side of each bread slice. Toast two slices buttered side down in a skillet over medium heat for 3 to 4 minutes until golden. Repeat with remaining slices.
- Warm the corned beef in the same skillet with 1 tablespoon water over medium-low heat, covered, for 1 to 2 minutes. Uncover and cook off any liquid.
- Spread dressing on the untoasted sides of all bread slices. Layer cheese, corned beef, sauerkraut, and remaining cheese, then close sandwiches. Grill in the skillet over medium heat with a weight on top for 3 to 4 minutes per side, until bread is crisp and cheese melts.
- Rest for 1 minute, cut in half, and serve while hot.
Notes
Drain and pat the sauerkraut as dry as possible before assembly so the bread stays crisp during grilling.
