Ingredients

  • 3 slices sturdy white sandwich bread
  • 4 to 6 oz thinly sliced deli turkey
  • 4 slices thick-cut bacon
  • 2 large leaves iceberg lettuce
  • 2 ripe tomato slices, about 1/4 inch thick
  • 2 tablespoons mayonnaise
  • flaky sea salt and freshly ground black pepper

Method

  1. Preheat oven to 400°F (200°C). Arrange bacon on a wire rack over a foil-lined sheet; bake 12 to 15 minutes until crisp. Drain on paper towels.
  2. Toast bread until golden, 2 to 3 minutes.
  3. Wash and dry lettuce; slice tomato, season with salt and pepper.
  4. Spread mayo on two bread slices. Stack dry slice on one mayo slice. Layer tomato, lettuce, and bacon on the other dry slice. Place middle slice on top (mayo side down), add turkey, and close with last slice mayo side down. Toothpick corners, cut diagonally, and serve.

Notes

If you don’t have a wire rack, crumple a sheet of foil on the baking sheet and lay the bacon on top to lift it from the grease. For the crispiest result, let the bacon cool for a minute or two before building the sandwich.
