- Roughly mash the boiled potatoes, leaving some small lumps. Heat oil in a small pan, add cumin seeds and let them crackle for 30 seconds. Stir in turmeric and red chili powder, then add the potatoes and salt. Mix well for 1 minute and remove from heat.
- Butter one side of each bread slice. Place two slices buttered-side down, spread 1 tbsp green chutney on the dry side, then layer with potato filling, cucumber, tomato, onion, beetroot, a sprinkle of chaat masala and salt, a cheese slice, and 1 tsp tamarind chutney. Close with the remaining bread, buttered-side up.
- Heat a skillet over medium heat. Place sandwiches buttered-side down and toast 3–4 minutes until deep golden. Flip carefully and toast the second side for another 3 minutes.
- Slice diagonally into triangles and serve hot with extra chutney and ketchup.
Notes
If tamarind chutney is unavailable, mix 2 tablespoons of ketchup with a generous pinch of chaat masala. You can assemble the sandwiches a few hours ahead and refrigerate them, covered, then toast just before serving.
