Ingredients
Method
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan. Mash bananas, then stir in melted butter, both sugars, eggs, sour cream, and vanilla until combined.
- Whisk flour, baking soda, salt, and 1 teaspoon cinnamon (if using). Fold into wet mixture until just combined.
- Stir together the 1/4 cup brown sugar and 1 tablespoon cinnamon for the swirl. Layer half the batter, half the swirl mix, remaining batter, and remaining swirl mix in the pan. Swirl with a knife for about 10 seconds.
- Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan 10 minutes, then transfer to a wire rack.
- Cool completely, at least 30 minutes, before slicing. Serve at room temperature.
Notes
For the best texture, let the loaf cool fully before slicing. If your bananas are extra large, use only 2 to avoid a gummy crumb. The swirl mixture can be doubled for a bolder cinnamon hit.
