Cinnamon Sugar Sourdough Bread Recipe

Ingredients
  

  • 1 cup (240g) sourdough discard, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/3 cup (76g) unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk
  • 1 1/2 cups (180g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/4 cup (50g) packed light brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk the sourdough discard, granulated sugar, 1/3 cup melted butter, egg, vanilla, and buttermilk until smooth, about 30 seconds.
  3. Add the flour, baking powder, baking soda, and salt to the bowl. Fold with a spatula just until no dry flour remains, about 30 seconds.
  4. In a small bowl, stir the brown sugar, cinnamon, and 2 tablespoons melted butter together until it looks like damp sand.
  5. Spread half the batter into the prepared pan. Sprinkle half the cinnamon sugar mixture on top. Cover with the remaining batter, then top with the rest of the cinnamon sugar. Swirl with a knife for about 15 seconds.
  6. Bake for 45 to 55 minutes, until a toothpick comes out clean. Cool in the pan 10 minutes, then turn out onto a wire rack and cool completely before slicing.

Notes

If you don’t have buttermilk, mix 1 teaspoon lemon juice into 1/2 cup milk and let it sit 5 minutes. For the cleanest swirl, avoid overmixing once the cinnamon sugar is in the pan.
