Method
- Whisk the flour, baking soda, and salt together in a medium bowl for 30 seconds.
- Beat the butter and sugar on medium speed for 2 to 3 minutes until light and fluffy, then beat in the egg, egg yolk, and vanilla. Mix in the dry ingredients on low just until combined.
- Stir the 1/4 cup sugar and cinnamon in a shallow bowl. Roll generous 2-tablespoon portions of dough into balls, then coat each ball thickly in the cinnamon sugar.
- Place 3 inches apart on a parchment-lined sheet. Bake at 350°F for 10 to 12 minutes until edges are set but centers look slightly underdone. Cool on the sheet for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
If the dough gets too soft while you roll it, chill the uncoated balls for 10 minutes, then coat and bake. No need to chill the whole batch of dough beforehand.
