Cinnamon Roll Poke Cake Recipe

Ingredients
  

  • 1 box (15.25 oz) white cake mix
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon, divided
  • 1/2 cup packed brown sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/4 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

  1. Heat oven to 350°F. Grease a 9x13 pan. Whisk cake mix, eggs, 1 cup milk, oil, 2 teaspoons vanilla, and 1 teaspoon cinnamon. Pour into pan.
  2. Mix brown sugar and remaining 1 teaspoon cinnamon. Sprinkle over batter. Swirl with a knife. Bake 25-30 minutes.
  3. Cool cake 5 minutes, then poke holes all over with a wooden spoon handle. Whisk sweetened condensed milk and melted butter; pour over cake. Cool completely.
  4. Whisk powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla until smooth, adding more milk if needed. Drizzle over cooled cake, slice, and serve.

Notes

Let the cake cool at least 1 hour before glazing, or refrigerate for a firmer texture. The cake is even better the next day.
