Method
- Cream 1 cup butter and 1 cup granulated sugar until fluffy, then beat in the egg and 2 tsp vanilla. Stir in the flour, baking powder, and salt to form a soft dough.
- Mix 3 tbsp melted butter, brown sugar, and cinnamon into a spreadable paste.
- Pat the dough into a 9x12-inch rectangle on parchment, spread the filling evenly, and roll tightly into a log from the long side.
- Wrap and chill the log for at least 1 hour. Preheat oven to 350°F. Slice into just under ½-inch rounds and place on lined baking sheets.
- Bake 10 to 12 minutes until edges are golden. Cool completely, then whisk confectioners’ sugar, milk, and ¼ tsp vanilla and drizzle over cookies.
Notes
The chilling time is not counted in the prep. Plan on at least an hour in the fridge before slicing, or freeze the log for 10 minutes if you are in a hurry. Let the cookies cool fully before glazing so the drizzle stays clean and white.
