Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp fine sea salt
  • 3 large ripe bananas, mashed (about 1 ¼ cups)
  • ⅓ cup unsalted butter, melted and cooled slightly
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour (for streusel)
  • ⅓ cup packed light brown sugar (for streusel)
  • 1 tsp ground cinnamon (for streusel)
  • 3 tbsp cold unsalted butter, cut into small cubes

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment. Whisk together flour, baking soda, cinnamon, and salt in a large bowl.
  2. Make a well, add mashed bananas, melted butter, both sugars, egg, and vanilla. Stir until combined.
  3. Pour dry ingredients into wet and fold with a spatula just until no flour streaks remain.
  4. In a small bowl, combine flour, brown sugar, and cinnamon for the streusel. Cut in cold butter with your fingers until crumbly.
  5. Scrape batter into pan, smooth top, and sprinkle streusel evenly over it. Bake 55 to 65 minutes until a toothpick has moist crumbs.
  6. Cool 10 minutes, lift out, and slice warm with a serrated knife.

Notes

If your loaf browns too quickly, tent it loosely with foil after the 40-minute mark. The bread tastes even better the next day, but you’ll lose a little crunch on the topping.
