Cinnamon Bundt Cake Recipe

Ingredients
  

  • 2 ½ cups (312 g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 1 cup (226 g) unsalted butter, softened
  • 1 ¾ cups (350 g) granulated sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 cup (240 ml) buttermilk, at room temperature
  • ⅔ cup (140 g) packed light brown sugar
  • 3 tbsp ground cinnamon

Method
 

  1. Stir the brown sugar and cinnamon together in a small bowl until combined; set aside.
  2. Beat the butter and granulated sugar on medium speed until pale and fluffy, about 3 minutes.
  3. Add the eggs one at a time, then mix in the vanilla. Whisk the flour, baking powder, baking soda, and salt in a separate bowl. With the mixer on low, add the flour mixture and buttermilk alternately in three and two additions, starting and ending with flour, mixing just until combined.
  4. Grease and flour a 10- to 12-cup Bundt pan. Spread half the batter in the pan, sprinkle the cinnamon sugar evenly over it, top with remaining batter, and smooth the surface. Swirl once with a butter knife in a figure-eight motion.
  5. Preheat the oven to 350°F (175°C) and bake the cake on the lower rack for 50 to 60 minutes, until a skewer comes out with a few moist crumbs. Cool in the pan on a wire rack for 10 minutes.
  6. Run a spatula around the edges, invert onto a serving plate, and slice warm or at room temperature.

Notes

All ingredients should be at room temperature for the smoothest batter. If the cake sticks in spots after turning out, press any loose pieces back into place while still warm. Cool completely before wrapping for storage so condensation doesn’t make the crust soggy.
