Cilantro Lime Shrimp Recipe

Ingredients
  

  • 1 lb large shrimp (21 to 25 count), peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp lime zest
  • 2 tbsp fresh lime juice
  • ¼ cup chopped fresh cilantro
  • ¼ tsp red pepper flakes
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Pat the shrimp dry, then season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook 2 to 3 minutes per side until pink and opaque.
  3. Reduce heat to low. Push shrimp aside, add garlic and red pepper flakes, and cook 30 seconds, stirring constantly.
  4. Remove pan from heat. Add lime zest, lime juice, and cilantro, then toss to coat. Serve immediately.

Notes

If using frozen shrimp, thaw them fully and pat dry before cooking. The shrimp are best hot from the skillet, but leftovers keep for up to 2 days in the fridge and taste great cold over a salad.
