Cilantro Lime Rice Recipe

Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups water
  • 1/2 tsp fine sea salt
  • 2 tbsp unsalted butter
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest (optional)
  • 1/4 cup chopped fresh cilantro

Method
 

  1. Rinse rice in a fine-mesh strainer under cold water until water runs clear. Drain well.
  2. In a medium saucepan, melt butter over medium heat. Add rice and stir for about 2 minutes until edges are translucent.
  3. Pour in water and salt. Bring to a boil, then cover, reduce heat to low, and simmer for 15 minutes without lifting lid.
  4. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
  5. Stir in lime juice, lime zest, and cilantro. Toss gently, then taste and add a small pat of butter or salt if needed. Serve warm.

Notes

If the rice seems a little wet after fluffing, let it sit uncovered for a minute to release steam. For best results, use fresh limes and chop the cilantro just before adding.
