Cilantro Lime Coleslaw Recipe

Ingredients
  

  • 1/2 small green cabbage (about 1 lb)
  • 1/4 small red cabbage (about 4 oz)
  • 1/4 red onion
  • 1 cup loosely packed fresh cilantro leaves and tender stems, roughly chopped
  • 1 jalapeño (optional)
  • 3 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 1 tsp honey or agave
  • 1 small garlic clove, grated
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Method
 

  1. Shred the green and red cabbage into thin ribbons. Thinly slice the red onion. Toss with a pinch of salt and let sit for 5 minutes.
  2. Whisk the olive oil, lime juice, honey, grated garlic, 1/2 tsp salt, and pepper until combined. Stir in minced jalapeño if using.
  3. Pour the dressing over the cabbage, add the cilantro, and toss until everything is coated. Let sit 5 minutes, then serve.

Notes

The slaw is best eaten within a few hours of tossing, while the cilantro is still vibrant. If making ahead, keep the shredded cabbage and dressing separate and combine right before serving. Any resting time for the salted cabbage is hands-off and not included in prep.
