- Blend the lime juice, cilantro, garlic, olive oil, salt, and cumin until smooth.
- Toss the chicken with the marinade, then cook in a hot skillet over medium-high heat for about 6 minutes per side until charred and 165°F inside.
- While the chicken cooks, toss the cabbage, jalapeño, a small handful of extra cilantro, a squeeze of lime, and a pinch of salt to make the slaw.
- Warm the tortillas, slice the rested chicken against the grain, and assemble the tacos with the slaw, avocado, and any optional toppings. Serve right away with lime wedges.
Notes
The slaw tastes brightest right after tossing, so assemble the tacos as soon as it is ready. If you like a little extra char on the chicken, don’t move it around in the pan; let it sit undisturbed until the first side is deeply browned.
