Cilantro Lime Chicken Marinade Recipe

Ingredients
  

  • 1 1/2 to 2 pounds boneless, skinless chicken thighs or breasts
  • 1/3 cup fresh lime juice
  • 1/2 cup packed fresh cilantro leaves and tender stems
  • 3 cloves garlic, roughly chopped
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Method
 

  1. Place lime juice, cilantro, garlic, olive oil, cumin, salt, and pepper in a blender. Blend until smooth, about 30 seconds.
  2. Put chicken in a zip-top bag, pour marinade over, seal, and turn to coat. Refrigerate for 30 minutes to 2 hours.
  3. Heat a grill or grill pan to 400°F (200°C). Remove chicken from marinade, season lightly with salt, and grill 6 to 7 minutes per side until charred and 165°F internal temp.
  4. Rest chicken 5 minutes, slice against the grain, and serve with fresh lime wedges and extra cilantro.

Notes

The marinating time (30 minutes to 2 hours) is not included in prep or cook time. Avoid marinating longer than 2 hours or the texture may soften too much.
