Method
- Whisk together flour, baking soda, and salt in a medium bowl. Set aside.
- Beat butter, brown sugar, and granulated sugar together until light and fluffy, about 3 minutes.
- Add eggs and vanilla, then beat 1 minute more until smooth.
- On low speed, mix in the dry ingredients until streaks of flour remain. Fold in chopped chocolate by hand until just combined.
- Scoop dough into 2-tablespoon mounds on lined baking sheets. Bake at 375°F for 10 to 12 minutes, cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
Chilling the scooped dough for even 15 minutes helps the cookies bake up thicker. If your kitchen runs warm, pop the bowl of dough in the fridge between batches.
