- Beat the butter and 1/2 cup powdered sugar until fluffy, about 2 minutes. Mix in vanilla, then gradually add flour and salt. Stir in pecans until combined.
- Roll level tablespoons of dough into balls and place on parchment-lined baking sheets, 1 inch apart.
- Bake at 350°F (175°C) for 12 to 14 minutes, until bottoms are barely golden and tops are set.
- Cool on the sheet for 5 minutes, then roll warm cookies in the remaining powdered sugar. Cool fully on a rack, then roll a second time in sugar.
Notes
Use cool butter, not greasy-soft, so the cookies hold their shape. If the dough feels too crumbly to roll, squeeze a handful together with your palm and it will come together. Let the cookies cool completely before that second sugar roll for a coating that stays white and dry.
