- Preheat oven to 350°F (175°C). Whisk flour, cream of tartar, baking soda, and salt in a medium bowl.
- Beat butter and 1 ½ cups sugar 2 minutes until fluffy. Beat in eggs and vanilla.
- Mix dry ingredients into butter mixture on low just until combined.
- Stir together 2 tbsp sugar, cinnamon, and colored sugars in a shallow bowl.
- Scoop dough into 1 ½ tablespoon balls, roll in sugar mixture, and place on parchment-lined sheets 2 inches apart.
- Bake 8-10 minutes until edges are set and centers look slightly puffy. Cool on sheet 5 minutes, then transfer to a rack.
Notes
The dough can be made a day ahead and refrigerated; let it sit at room temperature for 30 minutes before scooping so it softens enough to roll. If you skip the colored sugars, use ⅓ cup granulated sugar with the cinnamon for rolling.
