- Beat butter, brown sugar, and granulated sugar until light and fluffy, about 2 to 3 minutes. Add egg and vanilla, beat 1 minute.
- Whisk flour, baking soda, cinnamon, nutmeg, and salt for 30 seconds.
- Add flour mixture to butter mixture, beat on low until just combined. Fold in oats, cranberries, and white chocolate chips by hand.
- Drop rounded tablespoonfuls of dough onto parchment-lined baking sheets, 2 inches apart. Bake at 350°F (175°C) for 10 to 12 minutes, until edges are golden and centers look slightly underdone.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
For the thickest cookies, chill the scooped dough for 30 minutes before baking. If the dried cranberries are hard and dry, soak them in warm water for 10 minutes, drain well, and pat dry before adding.
