Ingredients
  

  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup red and green M&Ms, plus more for decorating
  • 1 tbsp rainbow or holiday sprinkles, plus more for the top
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 1 to 2 tbsp milk
  • 1/2 tsp vanilla extract
  • Green gel food coloring

Method
 

  1. Mix 1/2 cup melted butter, brown sugar, and granulated sugar until combined. Add egg and 1 tsp vanilla, mixing until smooth. Whisk flour, baking soda, and salt, then stir into the wet ingredients. Fold in both chocolate chips, 1/2 cup M&Ms, and 1 tbsp sprinkles.
  2. Preheat oven to 350°F (180°C). Press dough into a greased 9-inch springform or cake pan in an even layer. Bake for 22 to 25 minutes until edges are golden and center is set but soft. Cool in pan 10 minutes, then unmold and cool completely on a rack.
  3. Beat 1/2 cup softened butter until pale. Gradually add powdered sugar, then 1 tbsp milk, 1/2 tsp vanilla, and green food coloring. Beat until fluffy, adding more milk if needed.
  4. Spread a thin layer of frosting over the cooled cookie. Pipe or swirl remaining frosting on top. Scatter extra M&Ms and sprinkles over the frosting.
  5. Let set 15 minutes, then slice into wedges and serve.

Notes

The total time does not include cooling, which takes about 1 hour before frosting. For the cleanest slices, chill the finished cookie cake for 20 minutes. The frosting is optional; the cookie tastes great with just a dusting of powdered sugar.
