Christmas Banana Bread Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup unsalted butter, softened
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1½ tsp vanilla extract
  • 2 tbsp orange zest
  • 1 cup mashed very ripe banana
  • ¼ cup buttermilk
  • ¾ cup dried cranberries
  • ½ cup chopped toasted walnuts

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Whisk flour, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
  2. In a large bowl, beat butter with both sugars until fluffy, about 2 minutes.
  3. Beat in eggs one at a time, then vanilla and orange zest. Mix in mashed banana and buttermilk.
  4. Fold dry ingredients into wet just until combined, then fold in cranberries and walnuts.
  5. Scrape batter into pan and top with extra cranberries and walnuts. Bake 55 to 65 minutes until a toothpick comes out with moist crumbs.
  6. Cool in pan 10 minutes, then turn out onto a rack. Cool completely before slicing.

Notes

The bread tastes even better the next day after the flavors meld. For a stronger orange presence, add ½ teaspoon orange extract along with the vanilla.
