Chopped Italian Sandwich Recipe

Ingredients
  

  • 2 large sub rolls
  • 4 oz thinly sliced salami
  • 4 oz thinly sliced capicola
  • 4 oz thinly sliced mortadella or ham
  • 4 oz provolone cheese
  • 1 cup shredded iceberg lettuce
  • 1 large tomato, diced
  • 1/2 small red onion, thinly sliced
  • 2 tbsp chopped pepperoncini
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • salt and black pepper

Method
 

  1. Pile the salami, capicola, mortadella, provolone, lettuce, tomato, onion, and pepperoncini on a cutting board. Chop everything together until the pieces are about 1/4 inch.
  2. Drizzle the olive oil and red wine vinegar over the mixture. Sprinkle with oregano, salt, and pepper. Toss until coated.
  3. Slice the rolls lengthwise without cutting all the way through. Toast cut side down in a dry skillet over medium heat for about 2 minutes until golden.
  4. Stuff the chopped filling into the toasted rolls, pressing it in tightly.
  5. Slice each roll in half diagonally and serve right away.

Notes

The filling tastes best when assembled right before eating. If you need to prep ahead, chop the vegetables and keep them separate from the dressing and meats until you’re ready to build. Leftover dressing can be whisked again and used on a salad.
