- Heat oil in a large skillet over high heat. Add beef and onion; let sear undisturbed 2 minutes, then break up and cook until browned, 3 to 4 minutes more.
- Reduce heat to medium, lay cheese over beef, let soften 30 seconds, then chop and fold cheese into meat until gooey, about 1 minute. Season with salt and pepper.
- Toast split rolls cut-side down in the pan until lightly golden, about 30 seconds.
- Pile beef mixture onto rolls, add desired toppings, and serve immediately.
Notes
A traditional bodega chopped cheese often includes a sprinkle of adobo seasoning; feel free to add a pinch with the salt. The beef mixture is best assembled right before eating so the roll stays crispy and warm.
