Ingredients
  

  • 1 ½ cups finely shredded zucchini, unpeeled
  • ¾ cup granulated sugar
  • ½ cup neutral oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ⅔ cup natural unsweetened cocoa powder
  • ½ tsp baking powder
  • ½ tsp fine salt
  • ½ cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch metal baking pan with parchment paper.
  2. In a large bowl, whisk together the shredded zucchini, sugar, oil, eggs, and vanilla until glossy.
  3. Add the flour, cocoa powder, baking powder, and salt and whisk until the batter is thick and streak-free.
  4. Fold in the chocolate chips with a spatula, then spread the batter into the prepared pan.
  5. Bake for 25 to 30 minutes until the top is set and a toothpick has moist crumbs. Cool completely in the pan, then slice into 9 squares and serve.

Notes

Cool the brownies all the way; warm ones will break apart. The texture improves after a few hours, so they are even better the next day. For clean slices, chill the pan for 20 minutes and wipe the knife between cuts.
