Method
- Preheat oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment and grease it lightly.
- Beat eggs and sugar on high until thick and pale, about 5 minutes. Beat in vanilla and oil.
- Sift flour, cocoa, baking powder, and salt over the egg mixture. Fold just until combined.
- Spread batter in the pan and bake for 10 to 12 minutes, until the top springs back.
- While the cake bakes, dust a clean kitchen towel with the 1 tbsp powdered sugar.
- Invert the warm cake onto the towel, peel off parchment, and roll up with the towel inside. Cool completely.
- Whip the heavy cream, 2 tbsp powdered sugar, and vanilla to stiff peaks.
- Unroll the cooled cake, spread the cream evenly, and re-roll without the towel.
- Dust with powdered sugar or cocoa, slice, and serve.
Notes
The rolled cake needs to cool fully before filling, which takes about 1 hour. For the cleanest slices, chill the assembled roll for 30 minutes in the fridge before cutting.
