Chocolate Peanut Butter Swirl Bundt Cake Recipe

Ingredients
  

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (63g) unsweetened cocoa powder
  • 1 3/4 cups (350g) granulated sugar
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp fine sea salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1/2 cup (120ml) hot brewed coffee
  • 8 oz (226g) cream cheese, softened
  • 3/4 cup (190g) creamy peanut butter
  • 1/3 cup (67g) granulated sugar (for filling)
  • 1 large egg, room temperature (for filling)
  • 1 tsp vanilla extract (for filling)
  • 4 oz (113g) semisweet chocolate, chopped
  • 1/2 cup (120ml) heavy cream
  • Pinch of sea salt

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 10- or 12-cup bundt pan with butter and dust with cocoa powder.
  2. Whisk together flour, cocoa, 1 3/4 cups sugar, baking soda, baking powder, and salt in a large bowl. Add buttermilk, oil, 2 eggs, and 2 tsp vanilla. Beat until smooth, then stir in hot coffee until just combined.
  3. In another bowl, beat cream cheese, peanut butter, and 1/3 cup sugar until smooth. Beat in the remaining egg and 1 tsp vanilla. Transfer to a piping bag.
  4. Pour half the chocolate batter into the pan. Pipe a ring of filling over it, then top with remaining batter. Swirl 3–4 times with a knife.
  5. Bake for 50–55 minutes, until a toothpick comes out with moist crumbs. Cool in the pan 10 minutes, then invert onto a rack to cool completely.
  6. Heat cream until simmering, pour over chocolate and salt, let sit 2 minutes, then stir smooth. Pour over the cooled cake, let set 30 minutes, and serve.

Notes

The cake keeps at room temperature for 2 days, or refrigerated for 5. Let the glaze set fully before slicing, or it will run. If your bundt pan is dark nonstick, start checking for doneness about 5 minutes early.
