Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp chia seeds (optional)
  • Pinch of fine sea salt
  • 1/2 cup whole milk
  • 2 tbsp natural peanut butter
  • 1 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract

Method

  1. Add oats, cocoa powder, chia seeds (if using), and salt to a jar or bowl. Stir briefly.
  2. Pour in milk, then add peanut butter, honey, and vanilla. Stir for about 1 minute until completely combined and no dry spots remain.
  3. Cover and refrigerate for at least 4 hours, or overnight. Stir, top with a drizzle of peanut butter, chopped peanuts, and chocolate chips, and serve cold.

Notes

The oats need at least 4 hours in the fridge to soften, but overnight gives the best pudding-like texture. If the mixture is too thick the next morning, stir in a splash of milk until it loosens up to your liking.
