- In a large bowl, stir the butter, brown sugar, and granulated sugar until sandy. Whisk in the peanut butter, egg, and vanilla until smooth.
- Add the flour, cocoa powder, baking soda, and salt. Fold just until combined. The dough will be thick and sticky.
- Cover and chill the dough for at least 1 hour, or up to 48 hours.
- Preheat the oven to 350°F (175°C). Scoop 2-tablespoon balls onto parchment-lined baking sheets, press lightly with a fork, and sprinkle with flaky salt.
- Bake one sheet at a time for 12 minutes, until edges are set and tops are crackly. Let the cookies rest on the sheet for 5 minutes, then transfer to a wire rack to cool.
Notes
The dough benefits from a long chill, so make it a day ahead if you can. If you only have one baking sheet, let the pan cool between batches so the dough doesn’t start melting before it hits the oven.
