- Whisk together the chia seeds, cocoa powder, and salt. Add the peanut butter, milk, maple syrup, and vanilla and whisk until smooth.
- Let the mixture sit for 5 minutes, then stir again to break up any clumps.
- Cover and refrigerate for at least 4 hours, stirring once more during the first 30 minutes if you can.
- Spoon the thick pudding into bowls and top with a drizzle of peanut butter, chocolate chips, or sliced banana. Serve cold.
Notes
The pudding needs at least 4 hours of chilling time, but overnight works best. If it firms up more than you like after a few days in the fridge, stir in a splash of milk before serving.
