Chocolate Peanut Butter Banana Bread Recipe

Ingredients
  

  • 1 cup (125 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 3 medium ripe bananas (about 1 ¼ cups mashed)
  • ½ cup (115 g) unsalted butter, melted and cooled slightly
  • ¾ cup (150 g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (130 g) creamy peanut butter (no-stir kind)
  • ½ cup (85 g) semisweet chocolate chips, plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment. In a medium bowl, whisk flour, cocoa powder, baking soda, and salt.
  2. In a large bowl, mash bananas, then whisk in melted butter, brown sugar, eggs, and vanilla.
  3. Fold dry ingredients into the wet mixture with a spatula until just combined.
  4. Drop spoonfuls of peanut butter over the batter, sprinkle chocolate chips, and drag a knife through to create swirls.
  5. Pour batter into the pan, smooth the top, and press extra chips on top. Bake 55 to 65 minutes, until a toothpick comes out with moist crumbs.
  6. Cool in the pan 10 minutes, lift out, and cool on a rack another 20 minutes. Slice and serve slightly warm.

Notes

This loaf slices most cleanly when it has cooled for at least 30 minutes after baking. The cooling time is not counted in the cook time above. If you are baking in a different pan, check the timing table in the tips section.
