Ingredients
Method
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment.
- In a bowl, whisk flour, cocoa, baking powder, baking soda, and salt.
- In a large bowl, whisk sugar and eggs until pale, then whisk in oil, yogurt, orange juice, zest, and vanilla until smooth.
- Add dry mixture to wet in two additions, stirring just until no floury streaks remain. Pour into prepared pan.
- Bake 50 to 55 minutes until a skewer comes out with moist crumbs. Cool 15 minutes in pan, then lift out and cool completely.
- Sift confectioners’ sugar into a bowl. Whisk in orange juice and a pinch of salt, adding juice a drop at a time until thick but pourable. Pour over cooled cake, let set 15 minutes, and slice.
Notes
The glaze will soften slightly if stored at room temperature. For the most tender crumb, avoid overmixing the batter once the flour is added.
