- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, and salt until no lumps remain.
- In another bowl, whisk the eggs, olive oil, milk, and vanilla until smooth. Slowly whisk in the hot coffee.
- Pour the wet ingredients into the dry and stir just until no flour streaks show, about 30 seconds. Do not overmix.
- Pour the batter into the pan and bake for 30 to 35 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool in the pan for 10 minutes, then turn out onto a wire rack, peel off the parchment, and flip right-side up. Cool completely, dust with powdered sugar, and slice.
Notes
This cake is even better the next day, after the flavors settle. Any mild, fruity olive oil works well — stay away from oils labeled "robust" or "peppery." The batter will be thin, which is exactly what you want for a moist crumb.
