Method
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Cream butter and both sugars until fluffy.
- Beat in egg and vanilla until the mixture is smooth.
- Stir in flour, cocoa, baking soda, and salt just until combined, then fold in oats and chocolate chips.
- Drop rounded tablespoons of dough 2 inches apart onto the sheets. Bake for 10-12 minutes until edges are set and centers look soft.
- Cool on the sheet for 5 minutes, transfer to a rack, and sprinkle with flaky salt while warm.
Notes
The cookies will feel soft when you take them out of the oven but will firm up as they cool. For an extra crackled top, rap the hot baking sheet on the counter once after baking.
