Method
- Melt the chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and cool slightly.
- Whisk the sugar into the chocolate mixture, then add the eggs one at a time along with the vanilla. Whisk until thick and glossy.
- Sift the flour, cocoa powder, and salt into the bowl, then add the hot coffee. Fold gently until just combined.
- Preheat the oven to 325°F (160°C) and line a 9-inch springform pan with parchment. Scrape the batter into the pan and bake for 45–50 minutes, until a toothpick comes out with moist crumbs.
- Cool in the pan for 15 minutes, then release the sides. Cool completely, dust with cocoa, and slice.
Notes
The cake needs time to cool fully before slicing, or the crumb will be too soft. Plan for at least an hour of cooling; the texture sets as it rests. For an extra glossy top, brush the warm cake with a simple chocolate glaze made from melted chocolate and a little butter.
