Ingredients
  

  • 1 3/4 cups (220g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 3/4 cup (65g) unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp fine sea salt
  • 1 cup (240ml) buttermilk
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup (240ml) hot brewed coffee
  • 1 cup (230g) unsalted butter, softened
  • 3 1/2 cups (440g) powdered sugar
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/3 cup (80ml) heavy cream
  • 2 tsp vanilla extract
  • Pinch of fine sea salt

Method
 

  1. Whisk flour, sugar, 3/4 cup cocoa, baking powder, baking soda, and salt in a large bowl. Add buttermilk, oil, eggs, and 2 tsp vanilla, beat 2 minutes until smooth. Stir in hot coffee just until combined.
  2. Pour batter into two greased and parchment-lined 8-inch round pans. Bake at 350°F (175°C) for 30 to 35 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Cool in pans 10 minutes, then turn out onto a rack to cool completely.
  3. Carve a V-notch from the top of one cooled layer to form the bottom heart point. Cut the second layer in half vertically. Assemble pieces on a serving plate with a dab of frosting as glue, trim to shape, and chill 15 minutes.
  4. Beat butter until creamy, then sift in powdered sugar and 1/2 cup cocoa. Add heavy cream, 2 tsp vanilla, and salt. Beat until fluffy. Crumb coat the cake, chill 20 minutes, frost fully, and serve.

Notes

The buttercream can be made a day ahead and kept at room temperature, tightly covered. Give it a quick whip before spreading. If the cake feels too soft to carve neatly, pop the layers in the freezer for 15 minutes and they will firm up perfectly.
