Chocolate Granola Recipe

Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup melted coconut oil or unsalted butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped raw nuts (optional)
  • 1/2 cup dark chocolate chips

Method
 

  1. Heat oven to 325°F (165°C). In a large bowl, whisk the oats, cocoa powder, and salt until evenly combined.
  2. Stir in the melted coconut oil, maple syrup, and vanilla. Mix until glossy and no dry oats remain. Fold in nuts if using.
  3. Press the mixture firmly into a lined baking sheet in an even layer. Bake 20 minutes, press down again without stirring, then bake another 10 to 15 minutes until dry on top.
  4. Cool completely on the pan, then scatter the dark chocolate chips over the top. Break into large clusters.

Notes

For the best clusters, resist the urge to stir while baking. The granola will crisp up completely as it cools, so let it sit undisturbed on the baking sheet. If the chocolate chips melt too much, pop the tray in the fridge for 10 minutes to set before breaking.
