- Whisk the eggs, milk, cocoa powder, sugar, and vanilla in a shallow dish until smooth and no lumps of cocoa remain.
- Melt the butter in a large nonstick skillet over medium heat. Dip each bread slice in the custard for 30 seconds per side, then cook for 3 to 4 minutes per side until deeply golden and crisp. Adjust the heat if the toast browns too fast.
- Transfer to plates, top with butter and maple syrup, and finish with a dusting of powdered sugar or extra cocoa and fresh berries. Serve right away.
Notes
To keep the first batch warm while you finish the rest, place the cooked slices on a baking sheet in a 200°F oven. The chocolate flavor is intentionally mild; if you want a bolder taste, stir a tablespoon of mini chocolate chips into the custard before dipping the bread.
