- Beat butter and sugar for 2 minutes until fluffy. Mix in vanilla and salt, then slowly beat in flour until the dough holds together when pressed.
- Roll the dough 1/4 inch thick between parchment sheets. Cut into rounds, place on a lined baking sheet, and chill briefly if soft.
- Preheat oven to 325°F. Bake 12 to 15 minutes, until edges are pale golden. Cool completely on a wire rack.
- Melt chocolate and oil until smooth. Dip each cookie halfway, place on parchment, and sprinkle with flaky salt. Let set 15 minutes, then serve.
Notes
The cookies need to cool fully before dipping or the chocolate will melt right off. If you want to speed up the setting, slide the tray into the fridge for 10 minutes. For the cleanest snappy chocolate, avoid stirring the melted chocolate too vigorously while it's warm.
