Chocolate-Dipped Carrot Cake Pops Recipe

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups finely shredded carrots
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped walnuts or pecans
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 1/2 tsp vanilla extract
  • 12 oz white or dark chocolate, chopped (or melting wafers)
  • 1 tbsp coconut oil or vegetable shortening
  • Sprinkles or crushed nuts for topping

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8-inch square pan. Whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg. In a separate bowl whisk oil and sugar together, then beat in eggs and vanilla. Stir in dry ingredients until just combined, then fold in carrots, coconut, and nuts. Pour into pan and bake 30-35 minutes until a toothpick comes out clean. Cool completely.
  2. Beat cream cheese and butter until smooth, about 2 minutes. Gradually add powdered sugar and vanilla, beating until fluffy.
  3. Crumble cooled cake into a large bowl, add frosting, and mix with your hands for 1-2 minutes until evenly moistened and able to hold its shape.
  4. Scoop tablespoon sized portions and roll into tight balls. Place on a parchment lined sheet and freeze 15-20 minutes until firm.
  5. Melt chocolate with coconut oil in a bowl over simmering water or in the microwave in 30-second bursts, stirring until smooth. Dip a stick into chocolate, insert halfway into a cake ball, then dip the whole ball into chocolate. Tap off excess.
  6. Immediately top with sprinkles or crushed nuts. Stand pops upright and let set at room temperature about 30 minutes before serving.

Notes

Chill the cake balls just until firm, not frozen solid. If the mixture feels dry when rolling, add a tablespoon of frosting at a time. For truffle style pops, skip the sticks and serve them as bite sized treats.
